Travel to the West using your palate when you dine in Alabama Mamma. This American-inspired restaurant serves amazing southern fried chicken that will rekindle your love for the protein. We personally visited the place to share with you thoughts and inspirations from this new ‘chick’ in town.
Theme and Location
This newly hatched restaurant features the fried chicken we came to know as a culture from the West, particularly in America. The name speaks for itself. “Alabama” is a known state in the southeastern region of the United States; and “Mamma,” a form of the accented “mommy” of the south. But this isn’t just a typical place to enjoy the classic taste of your fried chicken. It promises to bring more from that. Located at California Garden Square in Domingo M. Guevarra St., Highway Hills, Mandaluyong City, this sure will make any tummy satisfied.
Food and Flavors
Though we get quite accustomed with the classic fried chicken, uniqueness in both taste and presentation can be hinted in this new food hub. The secret is on the breading as they elevated the flavors. They also infused culture through the choice of spices which makes every bite phenomenal. We tried their original fried chicken and four of their chicken wings. Here are our honest thoughts about it.

Classic Fried Chicken
You can never go wrong with the classic as it is the root that started this all. We kind of got curious as to how Alabama Mamma does this typical dish so we ended up ordering some. As we have observed in the color and crust, this new restaurant has nailed the crispiness one can wish for their portion of fried chicken. The piece itself is pleasantly coated, giving us a nice crunch as we bite. We did not expect much with the flavor as this is their version of the original one. But we can tell from the texture and taste that it is well-cooked and well-seasoned.

Buffalo Wings
Another familiar name but with an authentic interpretation, Alabama Mamma’s Buffalo Wings sure have some spice to it. We anticipated its sizzling taste as we have tried other Buffalo Wings which is more spicy than usually. Their version is both bold and mild—the kind of hotness that won’t distract your taste buds from actually experiencing the whole thing. I love how it is tolerable even for people who aren’t into chili cuisines. This also lives up to the expectation of someone who enjoys spicy flavors like me.
With the balance in taste, we can say that their version is good. The only problem I encounter is the absence of a condiment to the serving. For someone who always eat Buffalo wings with a dip, I cannot help but look for a ranch or blue cheese to complement it with that. Sadly, they do not have any. Guess it’s purely a personal preference, since all of my friends did not ask for it. All in all, this Buffalo wings is worth a try.

Calamansi
If there is anything critics will complain about fried chicken wings, that would be its greasiness. It is cooked with oil after all. To deal with the fattiness, one of smartest things to do is to add some acidity to it. So when the menu says there is a calamansi (lime) flavored fried chicken, we cannot help but be excited.
The Calamansi-flavored fried chicken, as anticipated, neutered the guilt you usually feel after eating something that is fried. And through the ingredient (calamansi), has a strong sour taste, you get just enough with every bite. All in all, we think this variant is a wise way to cook fried chicken.

Manila wings
‘What will Manila taste like?’ We thought as we scanned through the menu and ordered anyway. Surprisingly, this Pinoy-inspired version of chicken wings bring out the sweet and savory side of the city. While a bit sweet, focus on seasoning was also given justice to achieve balance in flavors.

Liver Pate
Who would know chicken wings will go well with liver pate? This way of presenting a fried chicken dish is one of the most intriguing. The smooth texture of the pate and the crunchiness of the chicken wings jived together. It created a work of art in our palate and played with our senses. We love the idea of how these two ingredients worked out.
